BODEGA HACIENDA LA JAULA :  SUN AND SOIL HERITAGE

It was only a few years ago that the ex hacienda of La Jaula, nestled in the northern part of the state of Guanajuato, started renewing its life again.  Its good times seemed to have gone away forever. In ruins, almost a desert, barely populated, it did not offer too much to those of us who had inherited it, and who wished to work somehow in order to give it back, though little by little, the dignity of the gone-by years.
Thus, in 1997 we decided to join efforts with those of the nature of this
land, and collaborating fully with it, grow the marvellous Mexican fruit
which is the cactus pear.  Here is our offering: wines and liqueurs, ardent elixirs whose aromas and flavors takes us back to a prehispanic past, as well as to the tradition of the good wines which the Spanish conquest brought.  Nothing less than a genuine taste of  this area of Mexico. The hacienda of La Jaula was purchased in 1883.  It is located  in the county of San Diego de la Unión, at the boundary between the state of San Luis Potosí and Guanajuato; in fact, it shares a piece of land from each state.  During the time of the Viceroyship, all of this area , partially including the states of Aguascalientes, Querétaro and Zacatecas, was called  El Tunal Grande by the conquistadors due to the abundance of "that strange tree which the natives call “nopalli".

Our products are a reason for Mexican pride.
Cópil, a sweet and delicate liqueur.  There is an Aztec myth that the first cactus pear plant (nopal) was born on an islot on the lake of Texcoco.  Cópil, son of Coyolxauhqui, faces the fearsome god Huitzilopochtli to avenge his mother's death.  Upon being victorious, the god  tears off Cópil's heart and hurls it towards the lake.  The land of the islot is moistened with its blood, and this gives birth to the first "nopalli".  In time, it would demand its memory by raising that same heart to the heavens but multiplied into many more.
